Plantain Bread

Total Time: 60 minutes

Serves: 12 (1 loaf)





Utensils Needed:

  • baking pan

  • mixing bowl

  • wooden spoon

  • fork

  • measuring cups

  • measuring spoons


Ingredients

  • ½ cup of butter

  • ½ cup brown sugar

  • 3 tablespoons of milk

  • ½ teaspoon of baking soda

  • 1 beaten egg

  • 1 cup of very ripe plantains (plantains that should start to turn black)

  • 2 cups of flour

  • 1 tsp of baking powder



Method


Step 1

Preheat oven to 350F. Grease a loaf pan.


Step 2 In a large mixing bowl cream butter and sugar until smooth.


Step 3 In a small bowl, dissolve the baking soda in three tablespoons of milk. Add the milk mixture to the butter and mix until combined. Add the egg and mix well.


Step 4

Mash the plantains with a fork and combine with the wet ingredients.


Step 5 Stiff the flour and baking powder together and gradually add to the wet ingredients and mix gently until well combined.


Step 6 Pour batter into the prepared loaf pan and bake in a 350F oven for 40 minutes or until a toothpick inserted comes out clean.


Step 7 Allow to cool on a wire rack for 20 minutes and slice when cooled.
